Eclectik

Véronique, Patrick, Jean-Arnaud, and Jean-David are the four friends behind Eclectik. Although they come from different backgrounds, they share a passion for well-crafted beverages, with years of experience working with winemakers, distillers, and brewers in France and beyond. In 2020, they decided to steer that passion toward cider, working out of a tiny cellar in the center of Beaune. Eclectik is a unique cidery by design. Apples are harvested from wild orchards in Beaune and nearby. They also buy fruit from farmers in other French regions with rich cider-making histories, such as Pays d’Othe, Normandy, Brittany, Perche, and the Jura. Freshly pressed juices are transferred to Beaune, where they spontaneously and slowly ferment with indigenous yeasts over several months. Eclectik then ages these ciders in diverse barrels previously used for wines or spirits. Much time is spent tracking down unique barrels from Burgundy, Jura, Loire, and the Rhône, or previously used for spirits such as Armagnac, rhum, French or Scotch whisky, Calvados, and Marc or Fine de Bourgogne, just to name a few. After months of regular tastings, each cider cuvée is assembled from a specific combination of barrels designed to highlight terroir, the vintage conditions, and the unique qualities of the barrels. Once the blend is finalized, the ciders are bottled for secondary fermentation using méthode traditionnelleThey may or not disgorge the ciders, and all are bottled Extra Brut with no dosage.
